Welcome to Siam 1. Siam1 Thai Kitchen & Wine Bar Philosophy: We named our restaurant “Siam1” after the original name of Thailand, known as Siam (Ratanakosin Kingdom) or the Kingdom of Siam during the period 1782-1932. After this period in 1932, the name of Siam was changed by Royal Decree to the Kingdom of Thailand. Siam1 Thai kitchen & wine bar is an Authentic and creative restaurant and wine bar that was purely set up to raise the level of Thai cuisine and restaurants in Melbourne. Incorporating our idea of high value with the best possible service together with an authentic menu made from the highest quality produce and fresh products available. The most important component in Thai Cuisine is of course the ingredients themselves. We are dedicated to creating our very own ingredients wherever possible especially the curry pastes used in many of our dishes – we do not use pastes from cans. We use fresh vegetables and suppliers are carefully chosen: grass fed beef from Cape Grim, Kurobata Berkshire Pork and free range Bendigo chicken. The respect shown for home cooking can be found in the foundation of the authenticity of our dishes and has been further developed on many travels throughout The Kingdom.
